I like to keep my carrot soup limited on ingredients to let the carrots shine but if you want to jazz up this version a bit curry is my favorite add in. It gets better the next day. I used basil instead of tarragon and instead of heavy cream i added sour cream 2 heaping spoonfuls. I also added more carrots to enhance the carrot flavor. Carrots are root vegetables so they are great for winter soups and stews but they are also sweet and bright and full of flavor which makes them perfect for spring. When it was done cooking i put it in the vitamix in batches to puree it and that made it so smooth it was like cream of carrot soup but without the milk or cream. I also added a pinch of sugar. The carrots cook together with aromatics like onions garlic and fresh herbs before being puréed into a silky smooth soup that s delicious for dinner or packed up for lunch.
