Shred the meat with two forks and stir into the liquid. There should not be any remaining spices when finished. Alternatively you may cook on high heat for 4 hours. Cook on low for 7 hours or high for 5 hours. Transfer from slow cooker into a roasting pan reserve liquid.
Scoop fat off surface of juices in slow cooker and drizzle over pork about 1 3 cup then roast pork for 20 minutes. Add the bbq sauce and spread over the whole pork shoulder. Place the lid on the slow cooker and cook on a low heat for 8 hours. Stir celery onion barbeque sauce ketchup water garlic powder chili powder salt and pepper together in a slow cooker. Pour the bbq sauce over top of it so that it s completely covered.
Spoon over 1 4 cup fat from slow cooker juices then roast 15 minutes. In the bowl of a slow cooker whisk together the bbq sauce chicken stock apple cider vinegar and liquid smoke. Add in the onions and garlic and stir to combine. Combine all of the spices in a small bowl and rub all around the pork including inside any folds in the meat. Cook for 1 hour more.
