A splash of red wine vinegar wakes up the earthy vegetal flavors that mellow with low and slow cooking. Since becoming a mom finding time to cook has been hard and this soup was a perfect slow cooker candidate. It s finished off with a generous amount of pure extra virgin olive oil and red wine vinegar yes vinegar at the very end which add a punch of both flavor. Boil for 10 minutes then drain well and add to the slow cooker. This greek lentil soup called fakes soupa or faki in greek is my all time favorite lentil soup recipe.
