Cook the pasta shells according to the package instructions. I like to fold in fresh basil or spinach for a nice pop of flavor and green color. Stuff your shells with your eggplant tofu mixture and place in a bed of your favorite marinara in a 9 x 13 in baking dish. These tofu ricotta stuffed pasta shells are delicious and indulgent. Spread about two cups of your favorite pasta sauce in a baking dish 9 11 or slightly larger and nestle in your stuffed shells open side down or up if you prefer.
Add about 2 tbsp of tofu ricotta into each stuffed shell and place shells on top of marinara sauce. Make the tofu ricotta. Next up we ll use the pressed tofu to make the ricotta. I recommend blending the tofu ricotta and egg until smooth before stirring in the carrot mixture and cheeses. Salt and 1 4 tsp pepper and would do that again and left off the cheese in the sauce just sprinkling a bit of parmesan after baking so it looked pretty.
Cook jumbo pasta shells according to instructions. The tofu provides protein and nourishment and the fresh marinara sauce adds a bold savory flavor. Crumble the tofu by hand and add it to a food processor along with all the other ingredients. At this point you can sprinkle a little of your favorite vegan cheese on top if you want. Note that the recipe can easily be halved. Grab your pre cooked stuffed shells you ll need 18 20 and using a tablespoon place around 2 heaping tablespoons of the tofu ricotta filling mixture into each shell. Believe it or not i was able to reduce the fat and it still came out delicious. Pulse 7 8 times until everything is well combined and looks like ricotta. Pour 2 cups of marinara sauce into the bottom of a 9 x 9 casserole dish. Family styled dinner that you can batch make and have all week as leftovers. Place stuffed shells on top of marinara sauce optional. You can add vegan cheese on top but i don t bother. Pour a little more marinara on top of your shells.
