Add the sweet corn crabmeat rice wine seasoning and soy sauce. Place three quarters of the sweetcorn into a food processor and blend to a smooth purée. A rich chowder made with white kernel corn fresh cracked crab meat and green onions in a soup base of whole milk and half and half. Return the mixture to the soup slowly while stirring occasionally and bring back to the boil. Adding a spoonful from the pot is a very important step do not compromise on this point.
Then this mixture is combined with half and half old bay seasoning and canned corn in a dutch oven. Use 7 1 2 ounces of canned crabmeat drained and 8 ounces of imitation crabmeat cut into smaller pieces. I had no whole milk or half and half so i used one can of evaporated milk and used 1 milk for the rest. Since frozen corn is already cooked stir the puree into the soup when the milk is added in step 3 bring just to a simmer and then stir in the crabmeat and chives. Add the spring onion and ginger and fry for 3 4.
If using fresh corn use 4 large cobs. Now give the soup a good stir remove the spoon and slowly trickle in the beaten egg white so that it forms long thin strands in the soup. Sweet corn soup with crabmeat. Simmer until the soup thickens. The soup along with 8 ounces of cream cheese gets blended in a blender so that the soup is ultra creamy and smooth.

Stir in the crabmeat ginger spring onions soy sauce rice wine or sherry 1 teaspoon of salt and some pepper to taste. It just needs to simmer for 10 minutes and then the crab is added. I only had 1 2 cup green onions so i used a sprinkle. I used leftover dungeness crabmeat that we cracked yesterday. Just a few more minutes and this chowder is ready to dish up.
