I ve had a couple of pounds of wheat berries hanging around in the pantry since my last trip to the indian grocery store. I cracked the prarie gold for the cracked wheat. Because of past experiences with wheat flour we feared this bread would be dense but it was far from it with a hint of sweetness.
Starting with wheat flour mix in flour one cup at a time. We even made sandwiches out of it. Rustic and chewy with a substantial bite make this bread when you want a hearty loaf full of whole wheat flavor and goodness. I did change the flour measurements to 1 cup whole wheat and 2 cups bread flour. Mixing well after each addition.

When the second rising is complete punch down the dough and shape into two loaves. I was boiling potatoes to mash so i poured the water off of them for the hot water in the recipe. The bread is delicious and so healthy. This recipe only uses sourdough starter for levening so this is not a quick bread to make. I used butter rather than margarine and used all freshly ground hard white prarie gold wheat. Between these 2 changes my dough needed an extra 2 t. Mix for about 10 minutes to allow the wheat flour to develop.
