I haven t tried it but i think this would be amazing served cold in lettuce wraps with a drizzle of dressing and fresh chopped tomato. Chop chicken into bite size pieces and add to quinoa along with tomatoes and mix together. Serve warm or cold. To poach the chicken. Toss cooked quinoa with pesto place in a bowl for serving cover and set aside to stay warm.
This recipe is lean green and full of protein. Add pesto to quinoa and mix well. I mean goodness i named my blog after a bowl. If it s too thick add a bit of water to it. Fold the tomato into the mixture.
Feel free to ad lib with the ingredients to fit your veggie preferences. Once cooked drain and set aside covered. Stir the pesto through the quinoa. I chop my veggies in about 1 2 inch squares. The original recipe from 2014 is the same.
