Sticky Date Pudding

Combine dates and the water in a medium heatproof bowl. Slice the sticky date pudding into squares and serve warm or at room temperature drizzled with the butterscotch sauce. Line base and side with baking paper.

I ve been searching for a sticky toffee pudding recipe like the kind i had in edinburgh and this is pretty darn close. For a coffee sticky date pudding add 1 tablespoon of instant coffee granules in with the dates in step 1. Can t beat this desert with homemade ice cream. The sauce is very very sweet so i agree that you could reduce sugar in the sauce. For a salted caramel sticky date pudding add teaspoon salt flakes to the butterscotch sauce.

Also known as sticky toffee pudding the simple trick that makes all the difference is to pour some butterscotch sauce over the warm cake when it comes out of the oven.
