The buttery crumbly tender texture of these lemon shortbread cookies is the perfect backdrop to any number of flavors.
They just melt in the mouth. I like to add in a bit of cornstarch to help keep that sandy shortbread texture. A suggestion might be to chill slightly before trying to roll it. Another suggestion is to substitute 1 4 cup of rice flour or cornstarch for the all purpose flour. Sprinkle them with cinnamon sugar dip them in chocolate ice them or eat.
