I like to serve shrimp scampi pizza topped with fresh chopped parsley and wedges of lemon to squeeze juice onto it just before serving. The scampi sauce helps to keep the shrimp moist and the secret is sautéeing the shrimp just until pink before placing them on the pizza. Add in red pepper flakes and cook for 30 more seconds. Since today is national pizza day i just had to finally make this creation happen. Add shrimp and cook 2 minutes.
