Stir in garlic and ginger and cook for 30 seconds. Cook until the tofu is warmed through 1 to 2 minutes. Transfer the stir fry to a large platter. Place in a medium bowl. Add broccoli stir fry 3 4 minutes more or until vegetables are crisp tender then push vegetables away from center of wok or skillet.
Spray skillet with cooking spray and return to medium heat. In a nonstick skillet heat oil and brown tofu. Add onions garlic and ginger to pan. Remove tofu from pan with a slotted spoon. Add the marinated tofu to the vegetables along with 2 tablespoons water.
Stir in onions and cook for one minute. Stir fry carrots garlic for 2 minutes. If using frozen tofu simmer until completely defrosted. Add tofu to pan. On a cutting board cut tofu into cubes.
